There is no indication that she sends the letters, only that she writes them.
She tells them how much she loves to cook, but also incorporates some of the issues she is dealing with. She pens letters to celebrity cooks like Mary Berry and Jacques Pepin at the opening of many of the chapters. In spite of her CP, Ellie is a great baker and loves to cook.
